Dining Etiquette for Children

With the fast pace of life today, kids often miss out on learning the basics of dining etiquette and social graces. Chef Dean Fearing joins etiquette expert Charlene Levering to offer advice on place settings, proper use of silverware, mealtime manners and cultural history of the dining room.. Chef Fearing’s “obstacle course” of dining presents challenges such as cutting meat from a bone, eating peas and other difficult hurdles. This lively class consists of two hours of etiquette instruction and a three-course lunch at The Mansion.

Seaside Dining with Chef Michael Mina

Tuesday, March 9 and Wednesday, March 10

The Mansion and Chef Dean Fearing host a cooking demonstration and chef’s tasting dinner with Michael Mina, executive chef owner of the award-winning Aqua Restaurant in San Francisco. Chef Mina was lauded in 1997 by The James Beard Foundation with the coveted Rising Star Chef Award. Best known for his exquisite seafood creations, Chef Mina will share some of his techniques in a demonstration followed by dinner on Tuesday, March 9. The next evening, Wednesday, March 10 Chef Mina will present a five-course dinner in The Restaurant.

Salute to Southern Chefs

Chef Dean Fearing is honored as the Featured Chef for the seventh annual Salute to Southern Chefs at Charleston Place Hotel in Charleston, South Carolina. As host, Chef Dean Fearing will join Chef Bob Waggoner in welcoming you to four glorious days of wonderful food and wines. This event gathers a crop of the best chefs in the South to cook for a gala benefiting Share Our Strength, the national hunger-relief organization. Sample a selection of fine wines chosen for this special occasion by Andrea Immer, beverage director and cellar master at the famed Windows on the World, and Darryl Beeson, wine cellar master of The Mansion. Seasoned wine enthusiasts and beginners alike will enjoy this casual evening with two of the most knowledgeable sommeliers in the U.S. Ms. Immer, who was chosen Best Sommelier in the United States, and Mr. Beeson, whose expertise has helped place the Mansion’s wine cellars among the finest in the country, will share their vast knowledge of wines and finds.  By the end of the evening, you will be in complete agreement with Ms. Immer’s spirited philosophy: wine and wine education are fun.

Cooking Basics, with Amador Mora and David Bull

Discover the secrets of a great kitchen with The Mansion’s Chef de Cuisine Amador Mora and Executive Sous Chef David Bull. Chef Mora learned his craft under the 13-year tutelage of Chef Dean Fearing and has become indispensable as his right-hand man. Chef Bull is, at the age of 23, the youngest sous chef in The Mansion’s history. Together, these two will guide you through the preparation of a simple and delicious dinner beginning with tips on where to find and how to identify the best ingredients. For soups and salads, you’ll learn to make a good basic vinaigrette and how to build a soup from the stock up. For entrees, they’ll teach you techniques for saut�ing meat, how to make a port wine reduction sauce and the best way to prepare and season fresh vegetables. And for the big finish, Mora and Bull will share their ideas on creating a simple yet elegant berry dessert.

Spend an engaging evening with Chef Fearing and learn ways to transform the season’s bounties into creative entrees for at-home entertaining from one of the world’s greatest chefs. Using varieties of seasonal native ingredients and an intriguing array of flavors from other parts of the world, Chef Fearing will share his imaginative approach to making astonishingly inventive and delicious new dishes.

Cuisine De Terroir, with Christian Delouvrier

Thursday, November 11

Chef Dean Fearing welcomes Master Chef Christian Delouvrier of Restaurant Lespinasse in New York’s St. Regis Hotel. Delouvrier is known for his artful creations of foie gras, game and all things Gascon. Born and raised in France, Delouvrier’s trademark is “cuisine of the earth,” a combination of classic French techniques and the culinary traditions of southwestern France.  Consistently rated one of the best chefs in America, Chef Delouvrier will present a classic French five-course dinner. Paired with Chef Delouvrier’s dinner will be Champagne Veuve Cliquot and the 1997 release of Burgundies from Bouchard Pere et Fils.

Chef for a Day at The Mansion

Spend a day behind the scenes in one of America’s most famous kitchens. Chef Dean Fearing, will “put you to work” with his acclaimed staff, where you will have an opportunity to tailor your day according to your individual culinary interests. As Chef for a Day, you will be given a monogrammed chef’s coat, a copy of Chef Fearing’s The Mansion on Turtle Creek Cookbook, dinner for two in “your” restaurant and a lovely deluxe guest room where you may retire to sweet dreams and fond memories of your day in the Mansion kitchen.
