USA Cookbook

By Martha Hollis

Sheila Lukins, the food editor for Parade Magazine, and co-author of the Silver Palate and the New Basics Cookbooks and author of the All Around the World Cookbook,  gives a Star*Spangled Celebration to American food with an USA-sized tomb of more than 600 pages with 600 recipes.

The format of the book is movingly patriotic with blue print on white pages with red and blue top page stripes and red stars. The headnotes are chatty, just like sitting on a park bench or in a roadside caf.  Lutkins gives you the feeling that you were there while she was interviewing chefs, restaurant owners and just plain old regular folks from all types of backgrounds.

Sidebars are loaded with sagacious comments on our various cuisines, the ethnic pastiche creating the United States’ amazing wealth of culinary delights. Regional pride is abundant as is the imagination in the recipes with selections such as: Roasted Pheasant with Kentucky Bourbon Sauce, Macadamia-crusted Halibut with Coconut Curry, Monday Beans and Rice, Chappewa Wild Rice Soup, Blushing Peach Crunch, Silky Hot Chocolate Sauce and North Carolina-Style Pulled Pork Barbecue.

Testing and re-testing recipes is the mark of an excellent cookbook author. Lukins is famous for her care. Each recipe is accompanied with a nutritional analysis per serving with calories, fat, cholesterol, sodium, protein, and carbohydrates.

USA makes you proud to be an American and is more all-American than apple pie.
