CHEF COREY WAITEHapuna Beach Prince Hotel The Palette of Chef Corey Waite
Hapuna Beach Prince Hotel's Executive Chef Corey Waite on the Big Island of Hawaii didn't plan on a career in cooking--he wanted to be an artist. "I started cooking in restaurants to put myself though commercial art school, he says. "Then I started loving being in the kitchen more than school, and my career just took for from there." And if I never have a Picasso on my wall, at least I have had the pleasure of tasting some of his delicious creations at the Mauna Kea Resort. Waite oversees all food preparations for the resort's distinct and award-winning restaurants--The Batik, The Pavilion and The Garden restaurants in the Mauna Kea Beach Hotel and the Coast Grille, Bistro, Ocean Terrace and Hakone restaurants in the Hapuna Beach Prince Hotel. A nine-year veteran of Hawaii, Waite believes that his art training benefited his career as a chef. "I have a channel for my creativity," he says. I can be creative with colors and textures, so that the food doesn't just taste good; the presentation is artful and appealing, too. Waite uses a lot of fresh local Hawaiian ingredients and enjoys adding Asian techniques. If you are in the mood for an art museum, but you are hungry, you won't find a more artistic experience than one of Corey Waite's meals at the Mauna Kea Resort.
