George Restaurant to Open
A new venue for a favorite Dallas Chef
Chefs George and Katie Brown are opening GEORGE
Restaurant – a sibling venture of GEORGE Catering – August 10, 2004. GEORGE
will feature modern American cuisine with seasonal ingredients in a simple
style to highlight the natural, fresh flavors of the ingredients and
complemented by an international wine list.
The menu showcases the highest quality wild game, lamb,
prime beef, poultry, seafood and fresh vegetables available. “Our menu will
change daily or weekly as products go in and out of season. Menu items will
be inspired by what is available at the moment allowing me to take advantage
of meat, seafood and produce that have short seasons,” Brown said. “The food
will be pure without a lot of fussy sauces or starches, so it will be easy
to eat healthy at GEORGE.”

Restaurant, my goal is to build a solid reputation for presenting my
signature style and creations on the plates of Dallas diners. This venture
will allow me to hone my culinary skills daily in a cozy, colorful
restaurant with excellent food and service,” Brown adds.
GEORGE will also offer a chef’s tasting menu, which
will feature a multi-course meal that can be enjoyed with or without wine
pairings. These unique, creative menus will emphasize Brown’s commitment to
seasonal produce, meats and seafood.
Interior design and architecture team JB Jones and
William Baker of Jones Baker, widely recognized for creating unique
restaurants, lounges and retail venues, are handling the renovation and
creation of GEORGE. The concept will be clean and modern reflecting Brown’s
food and cooking style. A chic and inviting tone will be set with the
exterior, and a crisp new entrance and signage will welcome guests and lead
to both the dining room and lounge. The dining room’s sophisticated modern
ambience will be accented with contemporary art. The bar and lounge, with
its semi-private dining area, will flow from the entry and be intimately lit
while maintaining the restaurant’s modern edge with materials such as
terrazzo, marble, aluminum, glass and wood.
General Manager Jeff Bogert will oversee the restaurant
and bar and ensure the service is professional, polite, attentive and
unobtrusive. Prior to assuming his current role at GEORGE Restaurant, Jeff
was in charge of running events and training wait staff for GEORGE
Catering.
With more than 23 years experience in the food
industry, George has worked at several notable Dallas restaurants, including
The Dallas Museum of Art’s Seventeen Seventeen, The Melrose Hotel, The
Mansion on Turtle Creek, Baby Routh and Actuelle. In 1997, George was
recognized as one of the year’s top 10 “Best New Chefs” by Food and Wine
Magazine.
GEORGE Restaurant is located at 7709 Inwood Road,
