Scotland's first private distillery in nearly 200 years
Scotland's first private distillery in nearly 200 years began production in
Wester Ross in June.

John and Frances Clotworthy, who run the Drumchork Hotel at
Aultbea, hope to use their small still to produce a single malt, to be known as
the Spirit of Loch Ewe. The still uses a process that was once outlawed in
Scotland.
The specially designed "Small Still" uses the same methods
as illicit distillers once employed in Banffshire. There were believed to be
thousands of illicit stills hidden away in Scotland's hills and glens before
distilling was legalised. Distilling was legalised by the Excise Act of 1823.
The aim is to produce a small supply of the spirit that
first created the reputation of Scotch whisky two centuries ago.
The Small Still was commonly used to create a whisky which
entered legend as being smooth, fruity and easy to drink.
The Clotworthys already offer more than 500 single malts
spread across two bars at their hotel, which overlooks Loch Ewe.
