Porcine Pleasures at TenPenh

The upcoming Chinese Year of the Pig has brought renewed culinary inspiration to Asian restaurants everywhere, and to TenPenh restaurant in Washington, DC, in particular.  Chef de Cuisine Cliff Wharton, who is of Filipino heritage, will present a complete pork-laden meal, starting with a nod to his roots:

Chicharon [Philippine Pork Cracklings] amuse bouche with apple cider and crushed garlic dipping sauce and  Patis [Philippine fish sauce]. 

There is then a choice of two dinner menus: 
First Menu- Pork Adobo Raviolis followed by Roasted Léchon [suckling pig]
Second Menu- Pulled Pork Shumai followed by Thai Braised Pork Belly. 

For those who doubt the possibility of a pork-based dessert –think again!  For a truly sweet-and-salty finish to the meal, Pastry Chef Norman Messer has created a succulent Bacon Brittle to grace a Maple Panna Cotta.

From February 19 through March 3, Wharton will be offering this three-course prix fixe menu celebrating this year’s honored zodiac sign for $47.05 – the price corresponding to the upcoming year in the Chinese lunar calendar.  The pig on the menu has been special ordered from an organic farm in Pennsylvania.
