Is this pumpkin treat a drink or a dessert?

I’d say both. And this is the kind of recipe I can make in a moment with things on hand. If I can find my can opener, that is. 

I love this so much it could be a drink and dessert. In fact, for me, it could be a perfect meal. Pumpkin is a vegetable with fiber, ice cream is dairy....and I can rationalize anything to drink this yummy concoction

8 oz pumpkin puree or cooked pumpkin cut in small pieces
12 oz vanilla ice cream
1 ounce Crème de Cassis liqueur
Mint leaves

Put pumpkin and ice cream in food processor and process with quick on and off pulses, just until ice cream and pumpkin are roughly combined.

Pour mixture into a nice goblet or brandy snifter. Garnish with Crème de Cassis and a mint leaf.

Optional: Use decorative caramel sauce to draw vertical lines along the inside of the glass to resemble the lines on the pumpkin.

Serves 2.
