With chopsticks in hand, authors Donovan M. Dela Cruz and Jodi Endo Chai spent two years researching dozens of local-style delis from Kaimuki to Kalihi, from Waianae to the Windward side. The book also includes a foreword by Hawaii Regional Cuisine celebrity chef Sam Choy, cover art by noted Island painter Kelly Sueda, and dozens of quotes by okazuya owners-many of whom have passed their businesses along from generation to generation.
